Santa Fe Tortilla Chip Topper

My second Bag Meal is complete! It took me much longer than I wanted, but that's what happens when unforeseen events make life STOP for a while. Never the less, it's done.


This is almost everything needed to fill 15 bags full with a yummy dinner.



This recipe is usually served with tortilla chips to scoop and dip, but I didn't want to store 15 big bags of chips. So I decided a great alternative would be taco shells. I've made the chip topper and have used it for burritos or quesadillas before, so I thought why not fill taco shells with it? (I added taco shells to the optional serving items on the printable recipe tags) Plus, the boxes fit beautifully in the bag meal bags!



My four year old LOVES bag meal assembly! This time she filled almost all of the bags by herself. Then I undid and re-did, because I'm O.C.D. like that and HAVE to have all the bags packed perfectly and identically to each other. Weird, I know.

I'm thinking adding a can of fruit to each dinner might be something I'll start doing. Just to have something on the side of the main course.



I actually moved the bags from the counters to this table yesterday. Just moving them made me feel better. I laminated the tags and got them cut to size.



Genny took on the task of hole punching for me.

  1. Yay! You're back! I bet your kitchen looks fabulous with all the bags moved (; I am going to add these toppers to my menu for the next couple weeks.
