I'm two weeks in and so far things are going well. Although Week 2 handed me some challenges that Week 1 was clear of, I'm still feeling great and optimistic about my workout schedule. See the post titled Healthy Life, Healthy Wife for more details on my exact program.<br />

Week 1 - The workouts were fairly simple. I started to feel sore about day 3 and got really amped up about that. I LOVE that sore feeling! I found it easier to get my workout in first thing in the morning. I first thought I'd get up early, but then I remembered... I'm NOT a morning person. Instead, I get up the same time I always have and still make sure my kids' get ready for school and out the door on time. In between the "get dressed, finish your breakfast, brush your teeth" requests, I was doing reps! Then after my oldest is safely at school, I head into my office and hop on my eliptical machine to tackle the cardio portion of the daily goal. Showered and dressed by 10:30am, I'm ready for the rest of my day and my conscience is clear.<br />

Week 2 - The workouts are much harder. Those reps are adding up FAST! The cardio, a couple of times, feels like the longest 35 min. of my life. BUT... The sense of accomplishment and power over the mind is much greater than before. I'm sore EVERYDAY, but again, not a negative! My husband leaves for Seattle on Sunday, scheduled to return Friday evening. The nights are longer since he is usually the one that gets up if a child needs help or comforting. Not this week, I'm on day/night 24 - 7 duty. By Wednesday, I'm feeling really proud of myself for sticking with it even on the one morning my mind was screaming "NO!!!", but my body was cool with it.<br />
Then Wednesday afternoon hits. I fall on my knee after I run about 5 blocks trying to catch my dog that loves to run away! OUCH!!! Instantly my knee swells and starts to bruise. Thursday morning it hurts SO bad AND my children ALL have a fever. Not happening today! Friday, still hurts and kids still sick. Again Not happening.<br />
That brings us to today! With my hubby back home, and a day off for myself, I took my workout to the gym. I love that I can do this plan of mine either at the gym or my house. Because I missed a couple of days, I had to decide if I'd pick-up where I left off, or start where I was scheduled to be. I decided to do the reps and cardio numbers meant for today. Plus a little extra, since my knee was feeling better and I had taken two rest days in a row. The gym rocked and I loved it. 50 minutes of cardio, 135 leg reps, 220 core reps, and 110 arm reps. It felt GREAT! The name of the book is "Dinner is Ready!" - by Deanna Buxton. My friend, Heather, gifted this book to me a few Christmases ago. It's a great book with lots of recipe ideas and instruction on how to make 30 days worth of freezer meals in one day. It has a good amount of recipes from which my mom selected the Chicken Cacciatore. We made the meal, not for the freezer, but for dinner and found some things that needed improvement. I have since taken that recipe, made it a couple of times to get it right, and finally have an end product for a Bag Meal version! The recipe is under the "Bag Meal Recipe Tags" Menu. My kids inhaled it last night, which is always the stamp of approval I look for. Through the process of learning, trying, adjusting, and assembling these meals, I've figured out something it takes most people YEARS to learn. I know, for the most part, what works for my family AND how to plan food storage around meals and recipes, rather than items and pounds. This has been an enlightening journey that I hope I can continue to share with people around me.<br />

Through the repetition of "Bag Meal" recipe shopping and assembly, I have also learned that I don't NEED to have EVERYTHING in bags. Sure it's the simplest way to assure a well proportioned storage system. But it's not the ONLY way. My sister-in-law, Alissa, asked if I had considered keeping my recipes in a binder and just labeling the bags to save on paper and laminating sheets. This got me thinking... I prefer to have a printed full recipe label attached when I gift the meals, but do I actually need to tag EVERY SINGLE BAG? Not really. Then I wonder... Do I actually need to bag EVERY SINGLE MEAL? Again, Not really. The thing that makes these meals so quick and easy is not that the cans of food are already pre-gathered. It's that the herbs and spices are already pre-measured! So, a second option of organization enters the picture.<br />

One could create a binder and keep a detailed log of the canned goods and other items needed, purchased, and used for each meal, while storing them within their respective spaces on the storage shelves. Measuring out the Seasoning Packets could be the primary focus of preparation and assembly. Labeling each packet and keeping the packets in a designated location of their own. The Bag Meal Binder would serve as a reference for both recipes AND inventory of ingredients.<br />

I'm working on this idea, while still making sure I have a good supply of full meals assembled in bags. Either way, when creating your food storage system, ALWAYS keep MEALS in mind. I try really hard to include and cook with <u>fresh</u> vegetables in a large percentage of the meals I make for my family. But recently, I haven't been too great at this. I realized this about a week ago when I put pizza, chips, and animal crackers on my two youngest's lunch plates. "Hmmm... I USED to make sure there was always a fruit and vegetable included," I thought to myself. So, I checked my vegetable drawer in the fridge and sure enough, there was a packed full drawer, brimming with vegetables and greens that had their foot half way out the door! YIKES! Should I go ahead and throw it all away? Start over with my next trip to the grocery store? I considered this and then decided to go back to my old ways!<br />

So, she put out the question on facebook, "What do you do to prepare? AND What do you do with/for your kids before and during, to help YOU be able to listen and get more out of the sacrament meeting?" I thought about this and started to feel like I don't do enough mental and spiritual preparation.<br />

I wish I could say that my scripture reading, prayer, and periodic fasting is a little more meaningful the day or two before the Sabbath. That I ask specifically to have an impacting day of spiritual edification every Sunday. But to be honest, my biggest concern on Saturday is whether or not I'll get a date with my husband Saturday night!<br />

Then I started to think about our nightly routine and I realized that we are preparing our family for the Sabbath EVERYday of the week. Every night we kneel together in prayer after reading from the scriptures. We talk about primary and nursery throughout the week, to keep the kids remembering what they learned and keep them excited to go back for more. Although this is done in passing, and is a fleeting moment, it IS what we do. Bart and I also go over the meeting/choir schedule so there are no surprises. Helping the day itself go smoothly. These are all things we do unconsciously that get us ready each week. And although there is still room for more preparation, I think we're off to a good start.<br />

I DID share with Camille my answer to helping the kids be more reverent during the meeting. After the Sacrament, during the speakers, we get out what we call our Sunday Binders. Each binder contains a pencil pouch with colored pencils, and worksheets/coloring pages. All of these pages have been personally created or selected with the topics and themes of the Gospel in mind. BUT with basic math and writing skills included. My kids enjoy quiet learning activities, and it is something I feel is appropriate during the sacred time we get each week to worship and learn of our Savior and His teachings. Some of the pages I use come from <a href="http://www.lds.org/friend">www.lds.org/friend</a> under games and activities or at <a href="http://ldscoloringbook.com/">LDSColoringBook.com</a>. But most of the math and writing sheets I made myself. They aren't super professional quality, but my kids don't mind that. You can print out or just use for ideas. You can find the link below.<br />

I try my best to work within a budgeted amount set aside just for food storage. I've written about budgeting inside of budgets before. I cannot stress enough how important this concept is. Breaking down the allotted monies for various needs and then adding the element of savings to those monies is essential to having the funds you need when you need them. Or the steal of a deal opportunity that arises unexpectedly. (But falls within the food storage bounds, of course.)</div><div><br /></div><div>Things like: Case lot sales, incredibly priced meat, vegetables, or fruit that you want 40lbs of for canning, or a piece of provident living equipment you found on sale and have been needing.</div><div><br /></div><div>The $ amounts used in this example can, of course, be adjusted to your own situation and needs. The list of categories is longer at my house than what is listed above. I'm just trying to show the concept here.</div><div><br /></div><div>By including assigned savings within your budgeting, you won't ever have to sacrifice milk money to buy 25 boxes of cereal when the price per ounce just can't be beat. Or give up purchasing fresh produce for the week because EVERYBODY needs new toothbrushes at the same time AND you're out of laundry and dishwasher soap as well. </div><div><br /></div><div>I'm a big fan of the envelope system and use it religiously. This post, however, is prompted by my LACK of proper planning these last few months. I have been following my budget plan, but without the savings portion. I used to save like this without fail and always had what I needed when I needed it. But here I am, having not saved well and wouldn't you know it:</div><div><br /></div><div>This week alone I had a Food Dehydrator I've been wanting offered to me, used, at a really great price. Boneless Skinless Chicken Breasts are on sale at Buy-Low for $1.38 a pound! My friend who orders spices from San Francisco Herbs Co., (GREAT quality for KILLER prices) is placing an order and I have 8 different items I need to get into that order. If I had followed my own savings plan, I would not feel any stress over this and would be completely prepared. But instead I'm learning a lesson and being reminded that savings and preparation is always key! As it stands I am having to figure out how to make this all happen, which means I'll probably have to cut corners on my usual staples shopping. Or just plain miss out on a great opportunity. When I should be able to open up my savings envelopes and have no problem making it all happen. I haven't tried making a roux out of powdered butter and don't know that it would really work. Nor is powdered butter suitable for spreading as you can't re-hydrate it. Powdered butter is mostly intended for baking and works great for that purpose. My goal to have all 7 meals done by Saturday was a little over zealous. I began to realize this a week and a half ago when I went shopping for all the remaining ingredients I needed in order to assure their completion. My budget was simply too small. I had what I thought would be enough, but sadly was not. I walked out of the store short 48 cans of fruit, 1 can of Turkey (Cuz all of a sudden no one carries it on their shelves anymore!?), a large bag of Chow Mein Noodles (again couldn't find any) and 48 bottles of water. Even if I HAD found the items that weren't on the shelves, I would have been short the money. I've spent the last week and a half checking store prices, waiting to see how my grocery budget panned out by the end of the pay period, and praying for a miracle. A true test in patience, I guess! <div>As I still hunt around for Canned Turkey ( I only need ONE for heaven's sake!), and the Chow Mein, I have focused on the bags I CAN finish. The Mac and cheese and the Poppy Seed Chicken. These are more affordable because I already have most of them complete with fruit, vegis, and water. I just need a couple extra bags made. Where the other three have never had fruit, vegis, or water included in them so I need to buy for ALL of them.</div><div>My newly adjusted plan is to attempt to buy, or can myself, what I need for each of the remaining three meals over time, as I continue to move forward with the new meals that pass the testing phase. I was able to take <i>my</i> Stroganoff recipe and convert it to a bag meal recipe. I tried it on my family and it passed with flying colors. In my initial attempt a few things didn't work perfectly. Still tasty, but not perfect.<div><br /></div><div>I didn't cook the WHOLE bag of pasta making my pasta to sauce proportions off. I recommend using the whole bag up to 12 oz. Then there's the pepper. I like a REALLY peppery stroganoff, so I tried a full teaspoon in my test batch. I LOVED it, but my husband (who usually loves pepper) felt it made the flavor of the dish as a whole a little off. So in the recipe, (found in the Bag Meal Recipe Tags section), I reduced the pepper by half. But if you like the strong flavor of pepper... I say go for it! As you know, I currently have 7 different types of Meals. All of these recipes have been given to me by my friend, Heather. Once I have them all updated and complete, I will have 112 bags of food! I am currently 10 short of reaching that number. These 10 bags will be my priority this week and next, now that we've made it through the end of the year Holidays! But in order to create a long term goal and plan, I need to look ahead and create recipes for the meals I'll be bagging in the future. This is the part that gets you feeling pretty smart!<div><br /></div><div>Make a list of the favorite meals in your house, and try to translate the ingredients over to ingredients that can be stored long term. If it calls for Chicken Breast, use Canned Chicken (this goes for almost any meat, just be sure to use good quality and trusted brands or your own canned meats); If you need milk, try evaporated or powdered milk; Eggs - powdered eggs; Did you know they make Powdered Butter!? Fresh Herbs, use a lesser amount of Dried Herbs. Then TEST IT! Make the recipe Storage and Flavor Perfect, BEFORE buying 10 (or in my case 16) of everything! Here is the list of meals I came up with. Many of these can be Freezer meals too! As I test each of these, I'll report on how well or lousy they turn out. I just need to rearrange the shelving situation downstairs and can start taking them back down. <div><br /></div><div>I'm currently using my food storage budget to supplement holiday costs, so the purchase of foods to finish my meals and start making new ones will wait till the new year. I want to set a new goal date to have 365 dinners done and ready to start using. How long should I give myself? As of today, I have 102 now and therefore need 263 more to make my goal. When should I have those done by, starting January 13th? I could divide 263 by 16 (number of meals I do at a time), which would be about 16 Sessions of Bag Mealing. My budget is about $40 every two weeks. My husband and I have made choices between needs and wants. We have recognized when patience towards having an extra is best. We keep each other in check when the desire to keep up with the Jone's becomes too tempting. We have said no, to a lot of unnecessary things and expenses recently, for the sake of having a yard our kids can play safely in, plenty of emergency and daily use food on our shelves, and the ability to grow and sustain our own food.</div><div><br /></div><div>For a year now, we have been putting our extra money and time into turning an unsafe and unsightly back yard into a level and lush place for our family to enjoy and cultivate. Things have been slow, for this is not an inexpensive endeavor. But as we have been doing this, with the mind set of frugality in other areas, we have seen blessing after blessing help us keep the yard costs down.</div><div><br /></div><div>Bid after bid, I found someone who could fill and level the yard for a third of what all the other companies were charging. And they did a fabulous job. </div><div><br /></div><div>Friends and neighbors gave of their time and sweat to help remove huge weed trees that required three chain saws running, a boom lift, rope, and brute strength. This saved us hundreds of dollars.</div><div><br /></div><div>Another friend/neighbor with years of experience installing sprinkler systems helped my husband plan out and get materials for our sprinkler system at, again, a fraction of the cost compared to professional installers or even the big warehouse stores.</div><div><br /></div><div>Then my dear friend, mentioned as one of my provident living tools, has a special gift for being in the right place at the right time which leads to finding unbelievable deals and steals! On a walk about two weeks ago, she came across a house in our neighborhood that was having their backyard grass and curbing removed to put in a new back yard landscape. Bravely she asked what they were going to be doing with their sod they'd just cut up. Off to the dump it was going to go! She told them that I could use it and got us in touch. The funny part, it turned out to be one of my other good friend's parents. People I have a close friendship with. They allowed us to use their truck and we got all that wonderful grass and curbing for free! A lot of which has been laid with the help of our friends/neighbors who see us doing the work from their windows then drop what they're doing to come help. Over and over in my head, I reconfigured and designed the layout of my side garden. Not really something worth stressing over, but the anxiety of getting it right was plaguing me to the point of insomnia. Let me explain. <div><br /></div><div>I have two gardens, yes, two. </div><div>Our large garden space is located in the back yard. This is where we plant our normal garden vegetables for us to use during the typical gardening season. By having a garden, I get to enjoy fresh, local produce all summer and into the early fall. This saves me tons of money and makes gardening season my favorite time of year to cook and try new recipes!</div><div><br /></div><div>Our smaller, yet still decently sized, garden is located on the side of our house. Once a large patch of grass, I had an epiphany and asked my husband to help me tear out the grass, till the soil, and create this second garden space. My epiphany was to give myself enough space and incentive to have a garden plot solely dedicated to the purpose of canning. Each year we will plant one type of produce and can / freeze / or dehydrate. </div><div><br /></div><div>In a nut shell, two gardens - One to eat out of all season, and one for food storage.</div><div><br /></div><div>I spent most of my day yesterday sifting through the freshly tilled dirt, (Thanks Hubby!), and pulling out left over weed root and rocks that were turned up. I then raked through and created my two planting rows that run lengthwise through the garden. To finish it off, I placed stepping pavers down the center of the long rows. Then I bought my seeds!</div><div><br /></div><div>This year, I am planting green beans to can. I have three varieties of beans and two types of plant. I am planting Kentucky Wonder (Pole), Yellow (Bush), and Burgundy/Purple (Bush). My dilemma is the placement of the sprinkler heads and the direction of the sunlight in that garden. This garden is long and narrow with two sprinkler heads running lengthwise spraying across the width. If I plant two horizontal lines running parallel with the sprinkler heads Which Type do I plant in front (furthest from sprinklers)? Bush or Pole? Pole would cast shadow over the Bush blocking proper sun exposure. But Pole in the back (closest to the sprinkler heads), could block the water from reaching the bushes in front. SEE?...DILEMMA! </div><div><br /></div><div>By 4 am, I couldn't take the sleeplessness anymore! I got out of bed, and spent the next 2 hours deep cleaning and creating a spotless kitchen. During which the thought hit me... Maybe a multitude of short rows running widthwise? Huh! We told them the story about Joseph in Egypt, and how he interpreted the Pharaoh's dream then helped him to save the food from the years of plenty for when they'd need it during the years of famine. We then explained that this is why we have extra food on our shelves and why Mommy fills all these bags with more! Things might seem plentiful now, but we never know if or when hard times might hit. So it's always a good idea to be prepared.</div><div>For the activity we went into our storage room and pulled everything off the shelves that was needed for the Chicken and Peas Over Pasta meal. Our 4 and 3 year old LOVED helping to count while I took note of where we were short on a few items. The kids also helped me, a few days later, to shop and then put everything into the bags. I can't stand doing the laundry either. Let me clarify. The sorting, I don't mind. The washing, I don't mind. The Drying, even, I don't mind. For, as you know, these are very quick and automated things to do. It's the FOLDING and putting away, that causes the big pile up each week.<div><br /></div><div>In my early young adulthood, I worked for a retail clothing store. I learned all of the retail folding techniques and became addicted to how beautiful a shelf could look when everything was folded just so and even organized by color. I began to use this system in my own drawers and closet at home. In my later adulthood, during my single years in Texas, I was downright obsessive about it. </div><div><br /></div><div>Then, I moved to Utah, married my "Prince Awesome", and got pregnant with our first baby, all in the same year. Since that time, and two more babies later, I have been fighting the fight that EVERY mother does with the LAUNDRY! You find time to fold, only to have the kids try to "help." Or they villainously knock over piles and fling clothes everywhere the second you turn your back! Then you re-fold and re-pile to put everything neatly into drawers, only to have the drawers trashed by the children the next day as they roughly search for the items they want to wear. It's a never ending battle I tell you! And something's GOTTA give!</div><div><br /></div><div>So a few months ago I thought about it and determined that I had to decide what's worse? Messy drawers? Or a laundry covered couch? Definitely... The Couch!</div><div><br /></div><div>My children are 4, 3, and 21 months. Some of you mothers out there are AMAZINGLY organized and have equally organized children right when they're born. For me, it is a constant uphill battle to get my children to understand the importance of neatness and they really couldn't care less! So, I decided that I was through with laundry filled couches and COMPROMISED my earnest want for perfect and pretty drawers. </div><div><br /></div><div>I no longer fold my kids clothes. </div><div><br /></div><div>There, I said it! Judge all you want, but I'm telling you it has made a big difference. </div><div>My new routine:</div><div>Pull clothes from dryer to large basket. Sit with Large filled basket on my side and three empty baskets in front of me. If there is a little "helper" around, I no longer fight them off, they are perfectly capable of helping me and NOT destroying the work. We then proceed to sort. Each child has their own basket that gets filled with their own clean laundry. From that point, it's out of my hands. (Except for the youngest's clothes.) The two oldest then take their baskets and sort from them into the proper drawers. Yes! THEM not ME, putting their clothes away. And they're GREAT at it.
